Sweet and Sour Thai Macaroni With Chicken – I call it "Macaroni Salad Thai Way"
I don't really know who invented this dish, but I remember ordering this similar sweet and sour macaroni when my husband and I traveled to Southern Thailand ways back. A small restaurant on a beach nearby our hotel served this dish on a menu. I didn't really know what ingredients were in that dish, so I tried making this dish at home several times until I mastered the perfect one for me.
When finished, the sweet and sour Thai macaroni looks pretty much like macaroni salad. Serve this dish to your guests and they'll be surprised to find the hidden of sweet, tangy and spicy flavors.
You're welcome to substitute any types of meat you like - e.g. shrimps, pork, and beef.
I'm happy to report that everyone in my family enjoy this Thai macaroni dish. My husband always got excited when I told him that I would make this dish for dinner (Try making this for your husband). Even my 5 years-old twins love it too. Give it a try and see what you think.
Ingredients:
1. 4 cup uncooked shell macaroni or combination of different types of pasta
2. 3 Tbls sugar
3. 3 Tbls soy sauce
4. 2 pieces of chicken breast
5. 4 Tbls olive oil or canola oil
6. 3 cloves of garlic, chopped
7. 1 medium onion, halved and sliced
8. 1 cup scallion, cut into 1 inch long pieces
9. 1 tomato cut into wedges
10. 2 celery stalk, sliced
11. 3 Tbls fish sauce
12. 3 Tbls vinegar
13. 1/2 cup ketchup
14. 1 tsp hot sauce of your choice
15. Dash of ground black pepper
Direction:
Cut chicken breasts in halves length wise. Then slice them into bite site pieces (about ¼ of an inch thick). Marinate chicken with sugar and soy sauce. Put it in refrigerator while working on macaroni.
Bring water to a boil in a large cooking pot. Add macaroni and cook as directed. Drain the macaroni and let it sit in the strainer while you’re getting ready for the next step.
Combine fish sauce, vinegar, ketchup and hot sauce in a small bow and set aside.
Heat olive oil in a large deep bottom frying pan or a wok over medium heat. Add garlic, onion, celery and chicken. Stir the mixture occasionally. Cook about 4-5 minutes until chicken is cooked through.
Add macaroni, tomato, sauce mixture, and pepper to the pan. Gently tossing and combing all the ingredients together using 2 spatulas.
Reduce the heat to medium. Continue to cook and toss the content for about 3-4 more minutes.
Taste to see if you like the taste of it. You can adjust the taste according to your own preference. Serve hot.
