Hi,
2x2 Rib stitch is best in my opinion. Plain stockinette stitch and other ribs also work well.
I would suggest using needles that are 1-2 sizes smaller than those use for the hat body or reduce number of stitches to 90-95% of the total stitches in the hat body. For example, if you have 100 sts for the hat body then you would reduce it to 90 - 95.
There are also spandex yarns that you could use. They are very stretchy but a little bit hard to work with.
